Mix oats with chia or flaxseeds in a tub.Top with coconut or almond milk. Cover and leave to soak overnight.
Next morning add your choice of toppings;
Berries, grated apple, pomegranate
A little honey or maple syrup
You can pretty much just mix and match this one as you fancy
x2 eggs scrambled how you like.
A good slice of high quality smoked salmon/sausage or bacon
Wilt a good handful of spinach
Grill some cherry tomatoes
Add a squeeze of lemon juice and sprinkling of pepper.
A great high protein breakfast that will fill you up, keep you full till lunch and balance blood sugar.
Fruit Salad, Greek yoghurt, nuts & Seeds
Fill a bowl with choice of berries, pomegranate, banana, kiwi.
Top with yoghurt (Greek, natural or soya).
Top with a mix of different nuts, seeds and sultanas.
Another quick yummy breakfast full of antioxidants, protein and good fats.
a cup full of different chopped nuts,
half a cup of chia,
a cup of coconut flakes,
a cup of pumpkin and sunflower seeds,
1 large table spoon of coconut oil, melted,
1 large table spoon of honey or maple syrup.
Pop in the oven until brown and toasty. And you're good to go!!
one yummy quick granola. Again play around with different nuts and seeds.
Top with milk of your choice or add to berries and yoghurt.
Mix 1 banana to 2 eggs.
Add ground flax seeds, coconut flour or ground almonds to make a smooth batter mix.
Heat a frying pan and add a blob of coconut oil.
Add a small amount of mixture, you can normally get about 4 pancakes in the pan at once.
When set, turn over until cooked on both sides.
Eat these with Greek yoghurt, a drizzle of honey or maple syrup, cinnamon, nuts and seeds.
You can play around with the mixture and there are loads of different recipes available.
These are so simple and so yummy, and they freeze. All you have to do is grab it in the morning, microwave it and you're good to go. There are loads of recipes on the internet. This is a small example.
Chop a selection of veg. (pepper, leafy greens, onion, carrot or broccoli).
Chop any meat, ham or bacon, into small pieces.
Place chopped vegetables and meat into a non-stick muffin tray.
Mix around x6 eggs with a good splash of milk and a pinch of salt and pepper.
Add some goats cheese or cheese of your choice.
Pop in the oven for around 10 - 15 minutes until muffins are set and golden. Enjoy xx

Fry asparagus in butter until cooked (it should be still crunchy)
